This morning I was in the mood for eggs but I didn’t really want to make a boring omelette. So I decided to inspect the fridge a bit more and I found ingredients for a simple and quick (as quick is an important word when you’re hungry in the morning) no-crust quiche.
The recipe is for 12 muffin size mini-quiches, 1 quiche contains about 105 kcal, and costs around 12 CZK (June 2015)
2 eggs
6 egg whites
100 ml double cream or whipping cream (M&S)
100 g premium ham
100 g shredded cheddar (M&S)
50 g roasted peppers (M&S)
1 spring onion
10 g butter
0,5 teaspoon salt
Preheat the oven to 190°C.
Mix eggs and egg whites with cream and whisk a little. Cut the ham, roasted peppers and spring onion into little pieces and add it to the mixture. Add cheddar and salt. Mix well.
Butter the insides of a muffin tin so the quiches don’t stick to it. Pour the mixture into the tin, try to distribute the solid and liquid content evenly.
Bake for 15 minutes.
