Just a quick high-protein, low-carb meal.
The recipe is for 3 servings, 1 serving contains about 390 kcal
500 g pork neck (not too fatty)
2 pcs (160 g) white peppers
2 pcs (160 g) red peppers
1 medium yellow onion
240 g tomatoes
300 g broccoli
1 teaspoon (8 g) salt
1 teaspoon (3 g) mild chili powder (M&S)
1 teaspoon (3 g) ground dried garlic
1 teaspoon (3 g) sweet paprika
1/2 teaspoon (1 g) ground pepper
1 teaspoon (3 g) ground coriander
Cut the meat into small (1.5 cm) cubes and mix well with salt and pepper. Put it in the fridge. In the meantime, chop the broccoli, including the stem, into small pieces and steam it. Chop all the remaining vegetables (peppers, tomatoes, onion), put them in a bowl and mix them with chili, garlic, paprika and coriander.
Preheat a solid large pan on high flame, add the meat and sear it for several (5-6) minutes. Stir or toss it frequently so it gets done evenly. Add the vegetables, except for broccoli. Keep searing and tossing for another 5 minutes. As the flame is on high be careful not to burn the vegetables. Turn off the heat and gently mix in the steamed broccoli.
